LET THEM EAT CAKE



It's Rhonda Golsby Smith and no wonder she's smiling. Former Health Centre Manager. Ramingining. Currently trading out of Groote and Bickerton. A change is as good as a rest. Especially when it gives you the chance to hang out with your crony mates.

Now under the protective wing of her good long term mates, the Langrells and Rigby, on Groote.

It's more proof that cronyism will get you every where you want to go in the northern territory department of health.

Because, guess what? Golsby smith has been dying to work on Groote for years!

Be the beneficiary of double standards and blatant hypocrisy just like Rhonda and her stomach churning food. Have your cake and eat it too.

Sell out your professional obligations, ethics and your soul. And sulk like a child when you get caught before returning as an N5 at Bickerton like nothing ever happened.

Have your management mates complain that you are being bullied.

No matter. Mills (Rigby) and Langrell are always on the prowl for new spies to recruit into the camp. You can never have enough cronies can you to pass on tittle tattle can you?

Langrell is permanently in the market for cronies to watch her back and manage Anurugu when she takes leave or stands in for Mills' leave without exposing the truth as to what really goes on there. Her antics would make the church of Scientology gasp.

So what happened to the poor bloke (and his OT wife) who was managing Bickerton and got slung to make way for crony extraordinaire Golsby Smith?

    4 eggs, separated
    1 tsp. cream of tartar
    4 tbsp. water or milk
    1 c. sugar
    1 tsp. vanilla
    1 c. flour
    1 tsp. baking powder
    1 tsp. salt
    Separate eggs; whip egg whites and cream of tartar; set aside. Beat together 4 egg yolks and water or milk, then add sugar, vanilla, flour, baking powder, and salt. Fold in egg white mixture. Place into 9 x 13 inch cake pan (do not use glass pan). Smooth out batter being careful not to over beat batter. Bake at 350 degrees for approximately 20 minutes or until cake is light brown and springs back to touch. Great snack cake or use as strawberry shortcake.

    Ingredients
    2 cups all-purpose flour
    1 teaspoon salt
    1 teaspoon baking powder
    2 teaspoons baking soda
    3/4 cup baking cocoa
    2 cups sugar
    1 cup canola oil
    1 cup brewed coffee
    1 cup milk
    2 large eggs
    1 teaspoon vanilla extract
    FAVORITE ICING:
    1 cup milk
    5 tablespoons all-purpose flour
    1/2 cup butter, softened
    1/2 cup shortening
    1 cup sugar
    1 teaspoon vanilla extract
    Directions
    1. Preheat oven to 325°. Sift together dry ingredients in a bowl. Add oil, coffee and milk; mix at medium speed 1 minute. Add eggs and vanilla; beat 2 minutes longer. (Batter will be thin.)
    2. Pour into two greased and floured 9-in. round baking pans (or two 8-in. round baking pans and six muffin cups).
    3. Bake 25-30 minutes. Cool 10 minutes before removing from pans. Cool on wire racks.
    4. Meanwhile, for icing, combine milk and flour in a saucepan; cook until thick. Cover and refrigerate.
    5. In a bowl, beat butter, shortening, sugar and vanilla until creamy. Add chilled milk mixture and beat 10 minutes. Frost cooled cake. Yield: 12 servings.

    Ingredients
    3 cups all-purpose flour, spooned and leveled
    2 teaspoons baking soda
    1 teaspoon salt
    1 1/2 teaspoons ground cinnamon
    1 1/4 teaspoons ground cardamom
    1 cup (2 sticks) unsalted butter, room temperature
    2 cups packed light-brown sugar
    1/4 cup honey
    2 large eggs
    2 cups Basic Applesauce, or store-bought chunky applesauce
    Nonstick cooking spray
    Confectioners' sugar, optional
    Directions
    1. Preheat oven to 350 degrees. In a large bowl, whisk together flour, baking soda, salt, cinnamon, and cardamom. Set aside.
    2. In another bowl, with an electric mixer, beat butter, brown sugar, and honey until light and fluffy. Add eggs, one at a time, beating until combined. With mixer on low speed, gradually add flour mixture; beat just until combined. Beat in applesauce.
    3. Generously coat a nonstick 9-inch tube pan with cooking spray. Spoon batter into pan; smooth top. Bake until a toothpick inserted in the middle comes out clean (but slightly wet), 50 to 60 minutes.
    4. Cool on a wire rack 10 minutes. Turn out of pan onto a cutting board or baking sheet; invert cake onto rack, top side up. Cool completely. Dust with confectioners' sugar before serving, if desired.
